Peasant Skillet

I have made this with either pre-cooked sausages and frankfurters, which are a cheaper option and still tastes good. Using chorizo or some other type of cooked sausage/salami will add a different depth of flavour. The sliced potatoes do need to be quite thin to make sure they cook properly. One solution is to pre-cook the potatoes slightly in a pot of boiling water for a short time, while the bacon is cooking, to ensure they are soft by the end of the cooking time.

*To make Gluten-free, check the sausage ingredients and choose accordingly.

What to put on label:

In the Notes section:

  • Bake, covered, for 30 minutes at 180 degrees once defrosted.
  • Serve with garlic bread, if wanted. (These can either be supplied by yourself or the recipient can use what they have)
  • Serving size: Choose from below, depending what size foil dish you used.
  • If making Gluten-free, please list the sausage/chorizo/salami brand used. There is no need to list all the other ingredients.

Please specify on the label which brands are used if marking as GF.

This will make enough to fill one large family-sized foil tin (serves 6); or 3 medium foil tins (serves 3-4 each); or 5 small individual-sized foil tins (serves about 1-2 each). [These are rough measurements]

6 bacon strips, chopped
4 medium potatoes, thinly sliced
1 medium onions, chopped
0.25 tsp salt
0.25 tsp pepper
1 tsp crushed garlic
1 tsp dried oregano
3 cups small broccoli florets
3 medium carrots, thinly sliced
0.5 cup celery, sliced
500g fully cooked sausage (pre-cooked sausages, frankfurters, chorizo, salami, Polish sausage etc)

Directions

In a large skillet over medium-high heat, cook bacon until crisp. Drain on paper towels, reserving 2 tablespoons drippings in skillet.

Add potato and cook for 8 minutes, stirring occasionally.

Add onion and seasonings. Cook, stirring, until onions soften, about 5 minutes.

Add remaining vegetables. Reduce heat to medium; cook, covered, stirring frequently, until vegetables are crisp-tender, 10-15 minutes.

Cut sausage diagonally into 2cm slices; place on top of vegetables. Reduce heat; simmer, covered, stirring frequently, about 10 minutes.

Add bacon and give a quick stir to incorporate.
