American Goulash

This is super tasty and a favourite with kids. Our family loves this one.

Since we are a gluten free household, we adapted the original recipe and substituted the pasta with rice and it worked really well.

 

What to put on label:

In the Notes section:

  • Bake, covered, for 30 minutes at 180 degrees once defrosted.
  • Serve with salad or vegetables. (These can either be supplied by yourself or the recipient can use what they have)
  • Serving size: Choose from below, depending what size foil dish you used.

 

This will make enough to fill two large family-sized foil tin (serves 6); or 4 medium foil tins (serves 3-4 each); or 6 small individual-sized foil tins (serves about 1-2 each). [These are rough measurements]

 

*To make gluten free, either substitute with rice or use gluten free pasta. Please check ingredient lists. Please specify on label which brands are used if marking as GF.

*To make dairy free, omit the grated cheese at the end.

Ingredients

500g mince
1 onion, chopped
2 cloves garlic, minced
2 cups pasta sauce
1.75 cups beef stock or water
1 can diced tomatoes
3 Tbsp tomato paste
1 green capsicum, optional
1.5 Tbsp Italian seasoning or combo or basil and oregano
1 bay leaf
salt & pepper, to taste
1.25 cups uncooked macaroni or rice
0.5 cups grated cheese

Directions

Cook mince, onion and garlic over medium heat until no pink remains. Drain any fat if desired.

Add stock (or water), pasta sauce, diced tomatoes, tomato paste, capsicum (if using), seasonings, and bay leaf. Simmer, covered, for 15 minutes.

Add in the macaroni elbows or rice and continue to simmer, covered, stirring occasionally, until tender (about 20 minutes).

Remove and discard the bay leaf. Top with cheese, if using, and replace the lid. Let rest about 5 minutes or until cheese has melted.
